- CRYSTAL ROCK SUGAR : Basically, this type of sugar is the result of crystallization from a saturated sugar solution (no longer soluble in water) or sugar cane juice (sucrose) which hardens without a purification process. Not only does it come from sugar cane, crystallization of red sugar solution (coconut and palm) can also be processed into crystal rock sugar. The manufacturing process is considered long because the cooling of the sugar solution takes 7 days or more in the container. Next, the hardened sugar solution must still be dried under the sun to ensure that the sugar lumps are drained completely (removing the water content). In this case, there are 3 types of sugar colors that are commonly found, namely: yellow, brownish, and white.
