The distinctive aroma of sugar and its caramel-like taste are caused by the chemical reaction between the sugar and the amino acids contained in the sap, as well as the caramelization that occurs during the heating (cooking process) of the sap.   • BROWN SUGAR : Sap (extracted from sugar cane plant stems in the form of a sweet liquid) is the basic ingredient for this type of sugar.The white juice will crystallize into granulated sugar.   • GRANULATED PALM SUGAR (ANT SUGAR) : The basic ingredient for granulated palm sugar is brown sugar which is cooked, cooled, sifted, and dried in the sun for a long period of time (approximately 6 hours). The process takes longer than making brown sugar or brown sugar. The grains resemble granulated sugar, but in a finer version (like powder), dry, and has a same size (in general). Has a distinctive aroma of brown sugar (coconut or palm); The caramel aroma is not as strong as brown sugar. The color ranges from brownish yellow to brown.   • GINGER RED SUGAR : One of the processed brown sugar products that is no less unique is ginger brown sugar, which is a mixture of two basic ingredients (processed sap and ginger). Physically, its form is solid like brown sugar. However, there is also a liquid version. The presence of ginger in it provides a distinctive aroma (sensation of caramel and fresh ginger spices). In order to produce delicious ginger brown sugar, whether processed into a drink (it can warm the body), sweeten food, or consumed directly (It can relieve nausea in pregnant women), other spices are also added to the production, such as : cloves, cinnamon, and lemongrass.
  • CRYSTAL ROCK SUGAR : Basically, this type of sugar is the result of crystallization from a saturated sugar solution (no longer soluble in water) or sugar cane juice (sucrose) which hardens without a purification process. Not only does it come from sugar cane, crystallization of red sugar solution (coconut and palm) can also be processed into crystal rock sugar. The manufacturing process is considered long because the cooling of the sugar solution takes 7 days or more in the container. Next, the hardened sugar solution must still be dried under the sun to ensure that the sugar lumps are drained completely (removing the water content). In this case, there are 3 types of sugar colors that are commonly found, namely: yellow, brownish, and white. Different colors present different contents, where rock sugar crystals with a brownish color tend to contain more vitamins and minerals (manganese, phosphorus, potassium, and magnesium) than other colors. In essence, the darker the color of the sugar, the higher the benefits for consumers.
